Garden cress salad is a light dish that can easily be scaled up for a crowd. It combines trimmed garden cress with red onion and tomato, tossed in an olive oil, lemon, and pomegranate molasses dressing. The cress’s sharp, peppery leaves are balanced by the tartness of the pomegranate molasses.
Trim and wash the garden cress. Remove the thick stems and coarsely chop the leafy portions.
Thinly slice the red onion into half-moons and dice the tomato.
Mix the olive oil, lemon juice, pomegranate molasses, salt, and black pepper to make the dressing.
Put the garden cress, onion, and tomato in a large bowl and toss with the dressing. Transfer to a serving plate.
Be sure to remove the thick stems from the garden cress, or the salad will be fibrous and difficult to chew. Toss it with the dressing just before serving; if dressed too early, the leaves will release moisture and make the salad watery.
