Göce is wheat with the husk removed by pounding, then coarsely cracked. Unlike bulgur, it is not parboiled, so it takes longer to cook. In Adiyaman, it is simmered with yogurt and chickpeas and is a staple winter soup. Temper the yogurt and add it at the very end.

How to make it?

Cook the coarsely cracked wheat

Drain the soaking water. Bring the coarsely cracked wheat and 2 liters of fresh water to a boil, skim off the foam, and cook over low heat for 45 minutes. When pressed with a finger, a grain should have no hard center; if it does, add 100 ml of hot water and continue cooking.

Add the chickpeas

Add the cooked chickpeas and salt, and boil for 6 more minutes.

Temper the yogurt

Whisk the yogurt with the flour and egg until smooth. Gradually whisk in hot water from the pot, one ladleful at a time, to warm it. After five or six ladlefuls, the yogurt mixture will be at the same temperature as the pot.

Combine

Pour the warmed yogurt mixture into the pot in a thin stream, stirring constantly. Heat over low heat for 6 minutes, then turn off the heat as soon as the first bubbles appear around the edges; boiling will curdle the yogurt.

Drizzle with mint butter

Melt the butter and stir in the mint for 10 seconds. Pour it over the soup before it darkens.

Reminder

Soak the coarsely cracked wheat in cold water overnight, for at least 8 hours. Unsoaked coarsely cracked wheat will not soften even in an hour, and the grains will remain hard in the soup.
