Grass pea is a legume grown around Gaziantep and Adiyaman that is now nearly forgotten. Its seeds are between chickpeas and lentils in size, with an earthier flavor than either. Dried seeds are hard, so soak them overnight and simmer them for a long time. Bulgur gives the soup body, while mint-infused oil balances the earthy flavor.

How to make it?

Cook the grass peas

Drain the soaking water and bring the grass peas to a boil in 2 liters of fresh water. Skim off the first foam with a spoon, then simmer over low heat for 40 minutes. They are ready when one can be mashed between your fingers; if they are still firm, add 100 ml hot water and continue cooking.

Cook the onion and tomato paste

Melt half the butter in a separate pan and cook the finely chopped onion until translucent. Add the tomato paste, cook for 1 minute, then pour the mixture into the pot.

Add the bulgur

Add the bulgur and salt and cook over low heat for 18 minutes. The soup is ready when a bulgur grain can be mashed between your fingers.

Adjust the consistency

If the soup has thickened too much, add 200 ml hot water and boil for 5 more minutes. It should flow slowly from a spoon.

Drizzle with mint-infused butter

Melt the remaining butter, stir in the mint and red pepper flakes for 10 seconds, then pour it over the soup before they darken.

Reminder

Soak the grass peas in cold water overnight and be sure to discard the soaking water. This is a traditional food to eat occasionally; it should not be used as a staple eaten by itself every day.
