This Aegean-style dish is made by wrapping spiced ground beef kofta in grape leaves and grilling them over coals until smoky. An elegant main dish for picnics and cookouts.
Thoroughly mix the ground beef with the rinsed rice, grated onion, parsley, mint, red pepper flakes, salt, and black pepper.
Soak the brined grape leaves in lukewarm water for 5 minutes to remove excess salt. Cut off the stems.
Place a small portion of the kofta filling near the stem end of each grape leaf, shiny side down. Roll it tightly and shape the ends like kofta.
Arrange the wrapped kofta on a tray and refrigerate for 15 minutes before grilling so they hold their shape.
Bring the coals to medium heat. Brush the rolls with olive oil and grill, turning, for 20 minutes, until lightly charred all over.
Do not skip the resting time before grilling the rolls; the warmed leaves can loosen and open during cooking.
