Harumaki, a crispy Japanese snack, is made by mixing finely chopped shrimp, cabbage, and carrot with ginger and soy sauce, wrapping the filling in thin wrappers, and air-frying with a little oil. It stays tasty after cooling, so it can go in a lunchbox.

Make the Filling

Mix the shrimp with the carrot, finely chopped cabbage, scallions, ginger, soy sauce, and sesame oil.

Roll

Place 1 tablespoon of filling on each spring roll wrapper and roll tightly, sealing the ends with beaten egg.

Air-Fry

Lightly brush the rolls with cooking oil. Air-fry in a preheated air fryer at 200°C / 390°F for 10 minutes, turning them one time halfway through, until crisp and golden. If you do not have an air fryer, bake in an oven preheated to 200°C / 390°F for 15 minutes.

Reminder

Seal the ends of the rolls well with egg while wrapping; otherwise, they may open during air-frying. Do not overcrowd the basket; leave space between the rolls so every side crisps evenly. Allergen: Contains wheat (gluten), egg, sesame (sesame oil), shellfish (shrimp), and soy.
