Olive piyaz is a classic Hatay breakfast dish made by tossing pitted cracked olives with walnuts, scallions, and pomegranate molasses. It is a salad, not a spread: the olives are roughly chopped with a knife so each piece stays distinct. Pomegranate molasses balances the olives’ saltiness, while walnuts balance their richness; without all three, the piyaz tastes one-dimensional.

Pit and chop the olives

Gently crush the olives with the side of a knife to remove the pits, then cut each olive into three or four pieces. Do not use a food processor; it will turn the olives into a paste and make the piyaz more like a dip. Taste one olive. If it leaves a salty taste, soak the chopped olives in cold water for 10 minutes, then drain.

Prepare the herbs

Thinly slice the scallions, including both the white and green parts. Remove the parsley stems and roughly chop the leaves. Crush the walnuts with a knife, leaving pea-sized pieces rather than turning them into powder.

Toss and let the flavors mingle

Combine the olives, walnuts, scallions, and parsley in a large bowl. Whisk the pomegranate molasses, olive oil, red pepper flakes, and cumin in a separate bowl, then drizzle over the mixture and toss from the bottom up with your hands. Taste it; the olives should provide enough salt, so do not add more. Sprinkle the pomegranate seeds on top and serve.

Reminder

If the olives are very salty, soak them in cold water for 10 minutes after chopping, then drain. Adjust the saltiness by choosing and preparing the olives, not by changing the dressing; adding more pomegranate molasses to cover excess salt will make the piyaz too sour to enjoy.
