In Hatay-style tepsi kebab, the ground meat is spread in a pan instead of wrapped around a skewer: the mixture, kneaded with plenty of vegetables, is pressed into a thin layer, scored before baking, and topped with tomato and pepper. Finely chop the onion, pepper, and parsley by hand rather than using a food processor; processed vegetables release liquid and make the mixture steam in the pan instead of browning. Adding tomato-paste water halfway through baking keeps the kebab moist while browning the edges.

Finely chop the vegetables by hand

Finely chop the onion, hot green pepper, and parsley with a knife, and crush the garlic. Rub the onion with a pinch of salt, squeeze it in your hand, and discard the liquid. Do not use a food processor: processed vegetables release liquid, causing the mixture to steam in the pan instead of browning.

Knead the mixture

Knead the ground meat with the chopped vegetables, pepper paste, salt, and spices for 6–8 minutes. It is ready when the vegetable pieces are evenly distributed and the mixture holds together.

Spread in the pan and score

Using wet hands, press the mixture evenly into a 30 × 35 cm pan, 1 cm thick, all the way to the edges. Score 6 cm squares with a knife, cutting down to the bottom of the pan so the baked kebab separates cleanly along the lines.

Arrange the toppings

Cut the tomatoes into half-centimeter rounds and place one round on each square. Lay the whole peppers in the spaces between them.

Bake the first stage

Place the pan on the middle rack of an oven preheated to 200°C / 390°F and bake for 20 minutes. The ground meat should release its juices and begin to pull away from the edges.

Add the tomato-paste water and finish baking

Whisk the tomato paste with the hot water and olive oil, then pour it around the edges of the pan and between the scored lines. Bake for 15 minutes more, until the liquid is absorbed and the edges of the portions are browned. The center of one portion should reach 71°C / 160°F.

Reminder

Preheat the oven to 200°C / 390°F before you begin kneading the mixture. Let the baked kebab rest in the pan for 10 minutes, then separate it along the scored lines; the portions may fall apart if separated while hot.

Sebzeleri robot yerine bıçakla kıymak gerçekten fark ediyor. Robotta harç suyunu salıyor, tepside dilimler birbirine akıyor. Bıçakla kıyılınca dilimler pişince bile ayrı duruyor.

Salçalı suyu ilk pişirmeden sonra eklemek önemliymiş, baştan dökünce kebap haşlanıyor ve dilimler birbirine yapışıyor. Tepsiyi de fırının orta rafına koyun, alt rafta harcın yağı dibe akıp kızarmadan kalıyor.
