Cover the dough and let it rest in a warm place for half an hour.
Divide the dough into portions. On a floured work surface, roll each one as thinly as possible into a round or oval.
Heat a nonstick skillet thoroughly over high heat. Lay the lavash in the dry skillet. When bubbles and brown spots appear, flip it. Once the other side is cooked, remove it and place it between towels.
As the lavash cooks, place each piece between clean towels; the steam will keep them soft and pliable. Contains gluten. To soften lavash that has hardened, sprinkle it lightly with water and warm it in a skillet.
