Put the rinsed rice, boneless chicken thighs, grated ginger, salt and water in a pressure cooker and close the lid. Once it begins to boil, cook over low heat for 20 minutes.
After releasing the steam, take out the chicken and shred with two forks. Return it to the porridge and mix thoroughly.
Ladle the porridge into your bowl, sprinkle with finely chopped scallion and serve hot.
Serve the porridge hot. Leaving it at room temperature will make it thicken quickly.
