This Bursa-style dish is layered in three parts: fried flatbread pieces on the bottom, thinly sliced lamb on top, and strained yogurt on the side. Tomato sauce goes over the meat; sizzling butter is poured on last, at the table. The hot butter is functional, not just for show: cool butter soaks into the bread, while hot butter seals the surface.

Cook the lamb

Melt 20 g butter in a large skillet and spread the lamb slices in a single layer over high heat. The slices will release their juices first; once the liquid has evaporated, turn them until the edges are browned and season with salt. Do not crowd the skillet; cook in two batches.

Make the tomato sauce

Melt 20 g butter in a separate saucepan. Add the grated tomatoes and salt, then cook over medium heat for 12 minutes, until thickened and the oil rises to the surface.

Toast the flatbread

Cut the day-old flatbread into 3-centimeter squares. Toast in a dry skillet or in the oven, turning until the edges are firm and lightly browned.

Assemble the plates

Spread the toasted flatbread pieces on each plate. Drizzle with some of the tomato sauce, arrange the lamb slices on top, and add the remaining sauce. Spoon the strained yogurt along the side and place the grilled pepper beside it.

Pour the sizzling butter over it

Melt the remaining 60 g butter in a small skillet until foamy and lightly golden, then pour it sizzling over the plates. If the butter cools, the bread will absorb it and the plate will become greasy; hot butter seals the surface.

Reminder

Take the strained yogurt out of the refrigerator and let it sit at room temperature for 20 minutes. Ice-cold yogurt will cool the plate beside the hot meat, causing the butter to solidify immediately.
