These yeasted breakfast breads from Izmir are shaped into rings, dipped first in diluted grape molasses and then in sesame seeds, and cooked in an air fryer. They resemble Turkish sesame ring bread, but are thinner and crispier, with a distinctive double sesame coating.

Step by Step

How to make it?

1

Knead and proof the dough

55 min

Mix the lukewarm water with the yeast and leave for ten minutes. Add the flour, vegetable oil and salt and knead into a soft dough. Cover and leave to rise in a warm place for forty-five minutes.

2

Shape the rings

10 min

Divide the dough into eight pieces. Roll each into a long, thin strip and join the ends to form a ring.

3

Coat the rings

5 min

Mix the grape molasses with water to thin it. Dip each ring first in the diluted grape molasses, then in sesame seeds.

4

Bake in the air fryer

15 min

Arrange the rings in the air-fryer basket and bake at 190°C / 375°F for fifteen minutes, until golden. If you do not have an air fryer, bake for the same time in an oven preheated to 190°C / 375°F.

Reminder

Dip the rings briefly in the diluted grape molasses; if they soak for too long, the dough will become soggy and lose its shape. Allergens: contains wheat (gluten) and sesame.
