This spicy Jordanian zaatar bread is made by topping yeasted dough with a mixture of zaatar, olive oil, and hot red pepper flakes, then baking it. The added pepper gives this variation a distinct heat.

Prepare and Proof the Dough

Dissolve the fresh yeast in the lukewarm water and let it foam for 10 minutes. Add the salt to the flour and knead with the yeast mixture to make a soft dough. Cover and let it rise in a warm place for 70 minutes, until doubled in size.

Mix and Spread the Topping

10 min

Mix the zaatar, olive oil, and hot red pepper flakes. Divide the dough into small pieces and roll each one thin. Spread a thin layer of the mixture over each piece.

Bake

15 min

Bake in an oven preheated to 220°C / 430°F for 15 minutes, until the edges are lightly browned.

Reminder

Roll the dough thin; a thick base may stay raw in the center. Do not spread the zaatar mixture too thickly, or it may burn and taste bitter. Allergens: contains wheat (gluten) and sesame (in the zaatar).
