Cook the chicken in oil over medium-high heat for 10 minutes, turning until it changes color on all sides.
Add the garlic and ginger and cook for 2 more minutes.
Add the tomato, cumin, red chile powder, and salt. Cook over medium heat for 15 minutes, until the oil separates.
Add the green chiles and cook over low heat for another 8–10 minutes, until the chicken is tender. Stir in the garam masala.
Sprinkle with fresh cilantro and serve hot with bread.
Store in a covered container in the refrigerator for up to 3 days; the flavor deepens by the next day. Freeze for up to 2 months.
