From the hearty tables of the Central Asian steppe, these Kazakh-style cabbage rolls use meat pilaf left over from the previous day. Wrapped in cabbage leaves and briefly steamed, they are a quick breakfast dish that makes good use of leftovers.

How to make it?

Boil the leaves

Boil the cabbage leaves for 3 minutes to soften them, then use a knife to shave down the thick center ribs slightly.

Roll

10 min

Place a spoonful of leftover meat pilaf near the edge of each leaf. Fold in the sides and roll up tightly.

Steam the rolls

20 min

Sauté the onion, then add the tomato paste, water and salt to make a sauce. Arrange the rolls in a pan and pour the sauce over them. Cover and cook over low heat for 20 minutes.

Reminder

Lightly flatten the thick center rib when boiling the cabbage leaves, or the rolls may come undone. Contains no allergens.

Kalan pilav elimde olmadığında taze pişirilmiş pilavla da aynı 20 dakikalık süre ve oranlarla yapılabilir mi, yoksa nem oranı farklı olduğu için pişirme suyunu biraz azaltmak mı gerekiyor?

Lahana yerine elimde kalan pazı yapraklarını kullandım, yaklaşık 3 kaşıklık pilav harcıyla sarması gerçekten daha kolay oldu ve tadı da benim beklediğimden çok daha hafif kaldı.

Bende 20 dakika hiç yetmedi, yapraklar hâlâ biraz sertti ve çiğnerken diriydi; süreyi 30 dakikaya çıkarınca ancak istediğim yumuşaklığa gerçekten ulaştım, aksi hâlde aile pek beğenmemişti.
