Knead the dough

A Thessaloniki street-food staple, koulouri is made by shaping yeasted dough into rings, dipping them in grape molasses syrup, and coating them generously with sesame seeds. Baking gives them a crisp exterior and a slightly chewy interior.

Place the dough in a greased bowl, cover, and let it rise in a warm place for 60 minutes, until doubled in size.
Divide the dough into 10 pieces. Roll each piece into a thin rope and join the ends to form a ring. Dip in the grape molasses syrup, then coat immediately with sesame seeds.
Arrange the rings spaced apart on a baking sheet and bake in an oven preheated to 200°C / 390°F for 15 minutes, until golden and crisp.
Do not let the dough rise in a cold place, or the rings may not puff up enough in the oven. Allergens: Contains wheat (gluten) and sesame.
