A beloved Iraqi snack, kubbeh consists of a shell made from fine bulgur and ground beef, stuffed with a filling of ground meat, walnuts, and mint. Using an air fryer instead of deep-frying produces a similarly crisp shell with much less oil. Since the filling contains no added sweetener, this can be a good snack option for people looking for a diabetes-friendly choice.
In a bowl, knead the drained fine bulgur with the ground beef reserved for the shell, grated onion, flour, salt, and cumin until smooth and no longer sticky.
Sauté the ground beef reserved for the filling with the finely chopped onion. Add the chopped walnuts, red pepper flakes, dried mint, and salt, then stir until the filling cools.
Take walnut-sized pieces of shell dough and make a hollow in each one with your palm. Fill each with one 5 ml measure of filling, seal the opening, and shape into an oval meatball.
Arrange the meatballs in a lightly oiled air fryer basket and cook until the surfaces are browned and the shells are firm. Shake the basket every few minutes so they cook evenly.
Keep the shell dough thin when filling it; a thick shell may brown on the outside before the inside cooks through in the air fryer. Allergen: contains gluten (bulgur, flour) and tree nuts (walnuts).
