Anatolian kuskus is different from packaged couscous: semolina, flour, and water are rolled by hand on a large tray into tiny balls smaller than a chickpea, then dried. They swell in soup without falling apart. That is the difference from noodles: noodles are cut, while kuskus is rolled.

Roll the Kuskus

Spread the semolina on a large tray. Sprinkle the salted water over it with your fingertips, then roll it in circular motions with your palms. As grains form, sift flour over them to keep them from sticking together. Roll the mixture into balls smaller than chickpeas, about the size of lentils.

Sauté the Onion and Tomato Paste

Melt half the butter in a pot and cook the finely chopped onion, stirring, until translucent. Add the tomato paste and cook for 1 minute.

Bring the Broth to a Boil

Add the broth and salt, bring to a boil, and let it boil for 5 minutes.

Cook the Kuskus

Sift the dried kuskus to remove excess flour. Add it by handfuls to the soup, stirring as you go. Simmer over low heat for 15 minutes; the grains will swell to twice their size but keep their shape.

Drizzle with Mint Butter

Melt the remaining butter, stir in the mint for 10 seconds, then pour it over the soup. Serve with lemon wedges.

Reminder

Spread the rolled kuskus in a single layer on a clean cloth and dry it in the shade for 1 day. If boiled before it dries, the kuskus will dissolve in the soup and make it cloudy. Dried kuskus keeps for months in a jar.
