Lechon manok is a festive Filipino dish made by marinating a whole chicken in soy sauce and lemongrass, then spit-roasting it in the oven. This chicken version of traditional pork lechon is a favorite at family gatherings.

How to make it?

Marinate the Chicken

120 min

Rub the chicken with the soy sauce, lemon juice, garlic, and salt. Place the lemongrass stalks inside the chicken and marinate in the refrigerator for at least 2 hours.

Roast

70 min

Brush the chicken with oil and roast in an oven preheated to 190°C / 375°F for 60–70 minutes, turning and basting it occasionally.

Rest

10 min

Let the chicken rest for 10 minutes.

Serve

Carve into pieces and serve hot with rice.

Reminder

Store in a covered container in the refrigerator for up to 3 days. Freeze for up to 2 months.
