Lemper is a classic Indonesian snack made by cooking sticky rice in coconut milk, filling it with shredded chicken, and wrapping it in banana leaves. The leaves give the rolls their shape and add a light aroma during steaming.

How to make it?

Cook the Rice

Cook the sticky rice with the coconut milk and salt over low heat for 15 minutes, until the liquid is absorbed.

Prepare the Filling

Sauté the crushed garlic and finely chopped onion. Add the shredded chicken breast and ground coriander, then cook for a few more minutes.

Wrap the Rolls

20 min

Spread a handful of rice on a clean banana leaf and place some chicken filling in the center. Roll it tightly into a cylinder and secure the ends with toothpicks.

Steam the Rolls

15 min

Steam the wrapped rolls for 15 more minutes. Serve hot or at room temperature.

Reminder

Before wrapping, pass the banana leaf over a burner flame for a few seconds. Warming it makes it flexible, so it can be folded without tearing.
