This low-carb take on classic meat-stuffed grape leaves replaces the traditional filling with grated cauliflower. The mixture, kneaded with ground beef, is rolled in grape leaves and simmered over low heat. It is also presented as an option for people managing blood sugar.

How to make it?

Prepare the filling

Knead the ground beef with the grated cauliflower, grated onion, tomato paste, dried mint, black pepper, and salt.

Roll the grape leaves

20 min

Place the grape leaves shiny side down. Add a 5 ml measure of filling to the center of each, then roll snugly.

Cook

30 min

Arrange the rolls snugly in a pot. Add the olive oil, lemon juice, and water, cover them with an inverted plate, and cook over low heat for 30 minutes.

Reminder

Roll the dolma snugly without tearing the leaves; loose rolls may open as they cook. Remember to place an inverted plate over them in the pot to keep them from opening.

Karnabaharı çiğ kattım ama benim sarmalarımda hafif hamsı bir tat kaldı, belki de hafifçe haşlanıp süzülmesi önerilmeliydi; lezzet güzeldi ama bu detay eksik kalmış diye düşünüyorum.
