Stuffed vegetables and leaf rolls
Swiss chard leaves are wrapped around a minced-meat and rice filling and simmered over low heat. This is a gently tangy alternative to stuffed vine leaves. Made with a small amount of rice, it is a filling main dish that works well for portion control.
Knead ground meat, rice, grated onion, tomato paste, Turkish red pepper flakes, black pepper and salt thoroughly.
Blanch the Swiss chard leaves in boiling water for 1–2 minutes; drain and trim the stems.
Place a 5 ml measure of filling in the center of each leaf, shiny side down. Roll tightly and arrange snugly in a pan.
Drizzle with olive oil and add hot water. Cover and cook over low heat for 45 minutes. Serve lukewarm with lemon juice.
Do not boil Swiss chard leaves for long; soften only until foldable or they may tear. Freeze uncooked rolls in a single layer; add 10 minutes to the cooking time when cooking from frozen.
