Melkkos is a simple South African farmhouse dish: flour, butter, and a few drops of water are rubbed together by hand into coarse crumbs, then sprinkled into boiling milk. The crumbs do not dissolve completely; small, bite-sized dough pieces remain in the porridge, which is where the dish gets its name. Unlike mielie pap, a smooth porridge made with maize meal and water, melkkos is intentionally lumpy and made with wheat flour and milk. Sprinkle with cinnamon sugar and serve hot.

Rub the flour into crumbs

Put the flour in a large bowl and dot the room-temperature butter over it. Rub the butter into the flour with your fingertips. Sprinkle the water over in two 15 ml measures and continue rubbing. The crumbs should be separate, about the size of a chickpea or lentil, not wet sand; they should not stick together when squeezed in your palm.

Heat the milk

Bring the milk and salt to a boil in a heavy-bottomed pot, stirring occasionally. Just before it boils over, reduce the heat to the lowest setting; melkkos cooks in gently trembling milk, not at a rolling boil.

Sprinkle in the crumbs and cook

With one hand, sprinkle the crumbs into the milk from a height while stirring the milk with a wooden spoon in the other hand. Once all the crumbs are in, cover and cook for 10 minutes, scraping the bottom occasionally. The porridge should thicken enough to coat the back of a spoon while the crumbs remain distinct. Mix the cinnamon with the sugar, sprinkle over serving bowls, and serve hot.

Reminder

Sprinkle the crumbs into the boiling milk gradually, as if sifting them in; adding all the flour mixture at once makes it sink and stick to the bottom. Once the milk boils, reduce the heat to the lowest setting or the porridge may stick to the bottom of the pot and develop a burnt smell.
