Mevlana Boregi is a Konya-style layered phyllo pastry. The sheets are laid flat in a pan rather than rolled, with melted butter and ground lamb between the layers. No milk or water mixture is used; butter alone separates the layers, giving the pastry a dry, flaky texture rather than a soft one. After baking, cut it into diamond shapes.

Cook the filling

Cook the ground lamb in a dry skillet until it releases and reabsorbs its liquid. Add the finely chopped onion and cook until translucent. Stir in the salt, black pepper, and chopped parsley, then cook for 2 minutes. Spread the filling on a wide tray and let it cool completely.

Prepare the phyllo

Cut the yufka (thin Turkish pastry sheets) in half or into quarters to fit the pan. Melt the butter and let it cool until warm; hot butter can tear the sheets.

Layer the pastry

Lay one sheet of yufka in the greased pan and brush it with butter, then scatter some of the filling over it. Repeat until you have six layers; the bottom and top layers should have butter but no filling. Do not skip the butter between layers; it is what keeps them separate.

Brush the top

Whisk the egg yolks with 1 tablespoon (15 ml) melted butter and brush the mixture over the top layer. Score the pastry into diamonds with a knife, without cutting all the way through to the bottom.

Bake until golden

35 min

Bake in an oven preheated to 190°C / 375°F for 32–35 minutes. It is ready when the top is deep golden and the edges pull away from the pan. Let it rest for 10 minutes, then cut along the score lines and serve.

Reminder

Let the filling cool completely before layering it with the phyllo. A hot filling will dampen the sheets and make the layers stick together.
