Roast the vegetables

Red and green peppers are roasted and peeled, then combined with tomato, garlic and cumin in this classic cold Moroccan meze. Its vegetable-based, low-glycemic-index composition makes it suitable for people with diabetes, and it works equally well alongside grilled meat or in a lunchbox.

Put the hot vegetables in a bag and let them steam for 10 minutes, then peel.
Chop the peeled vegetables into small pieces and combine with the garlic, cumin, olive oil, lemon juice and salt.
Refrigerate the salad for at least 30 minutes to let the flavors come together.
Turn the vegetables occasionally as they roast, so one side does not burn too much and become bitter. To soften the sharpness of the garlic, finely chop it rather than crushing it.
