Kefta is a Moroccan spiced meat patty seasoned with cumin, cinnamon and ground red pepper. Fresh parsley and mint lighten the mixture, which cooks quickly on the grill. Serve it in bread or with rice and lemon for a satisfying dinner.

Take egg-sized portions of the mixture and gently flatten them in your palm to form oval patties, or thread them onto skewers.
Grill the patties over medium-high heat, turning them until browned on all sides. Caution: The internal temperature should reach 71°C / 160°F; this takes about 12–15 minutes.
Serve the hot patties in bread or alongside rice with lemon wedges.
