This multigrain bread is a whole-wheat loaf made with five different seeds that are soaked in boiling water before being added to the dough. Do not skip the soaking step: dry seeds absorb water from the dough and can dry out the loaf before it even comes out of the oven. Their hard grains can also cut through the gluten network. Soaked seeds carry their own water and stay soft in the dough.

Soak the seeds

Combine the five seeds in a bowl. Pour boiling water over them, stir, and cover. Use boiling water because warm water is not hot enough to soften the outer layers of the flax and oats. By the end of the soaking time, no free water should remain; the seeds should have absorbed it all.

Knead the dough

Dissolve the yeast and grape molasses in warm water and let stand for 5 minutes. Add both flours and the salt; knead for 9 minutes. Stretch a small piece of dough: it is ready when it forms a thin, translucent membrane. Do not add the seeds yet; their hard grains can cut the developing gluten network.

Fold in the soaked seeds

Once the gluten has developed, pour the soaked seeds over the dough and fold them in from the edges, distributing them through the dough in no more than 2 minutes. The seeds may not be perfectly evenly distributed, and that is fine; overworking the dough damages its membrane structure. Cover the bowl and leave the dough to rise.

Shape the loaf

Transfer the dough to a floured work surface. Fold the edges toward the center to shape it into a long loaf, then place it on a parchment-lined baking sheet. If desired, dampen the top and press it into a handful of seeds. Cover and leave it for the final rise.

Bake the bread

Preheat the oven to 220°C / 430°F and place a pan of water on the lower rack. Use a razor blade to make three diagonal slashes across the loaf, then bake for 45 minutes. The bread is done when the crust is dark brown and tapping the bottom produces a hollow sound. Cool completely on a wire rack.

Reminder

Soak the seeds in boiling water for 1 hour. Let the dough rise for 2 hours for the first rise, then shape it and let it rise for 50 minutes for the final rise. These three resting periods are not included in the recipe times.
