These simple New Zealand-style patties are made with ground lamb from the country's world-renowned lamb, mixed with mint and garlic, then grilled. Keeping the ground lamb cold as you work helps the patties hold their shape on the grill. Mint yogurt sauce balances the lamb's rich flavor.

How to make it?

Make the patty mixture

Work the garlic and onion into the ground lamb with half the mint, the salt and the black pepper.

Chill the mixture

60 min

Rest the mixture in the fridge for 1 hour to keep it cold.

Make the yogurt sauce

5 min

Mix the yogurt with the remaining mint and the olive oil, then refrigerate.

Shape and grill the patties

15 min

Shape the mixture into patties and cook on a preheated grill for 15 minutes, until browned all over.

Reminder

If the ground meat warms to room temperature, the patties may soften and fall apart on the grill. Keep it chilled while mixing and resting. Allergens: contains milk and dairy products (yogurt).

Harcı tarifteki 1 saat yerine sadece 20 dakika dinlendirdim, köfteler ızgarada biraz daha kolay dağıldı ve şekillerini tam koruyamadı, bir dahaki sefere mutlaka tam süreye uyacağım.

Kuzu kıymanın yarısını dana kıymayla karıştırarak kullandım, aroma biraz daha hafifledi ama köftelerin dokusu yine de gayet yumuşak ve sulu kaldı, 500 gram toplam kıyma yine yetti.

Kıymayı tarifte açıkça uyarıldığı gibi buzdolabında soğuk tuttum, köfteler ızgarada hiç dağılmadan mükemmel şekillerini korudu, ailem bu köfteyi klasik dana köfteden bile daha lezzetli buldu.
