Stuffed vegetables and leaf rolls
This Cairo-style stuffed grape leaf recipe uses bulgur in the filling instead of a grain-free mixture, making it a whole-grain dish. A pressure cooker greatly shortens the cooking time.
Mix the bulgur, tomato, onion, parsley, cumin, salt, and half of the olive oil.
Place one 5 ml measure of filling in the center of each grape leaf and roll it up tightly.
Arrange the rolls snugly in the pressure cooker and add the water, remaining olive oil, and lemon juice. Once the cooker reaches pressure, cook for 12 minutes.
Let the pressure release naturally and rest for 8 minutes. Serve warm or cold.
Do not arrange the rolls too loosely in the pot; loosely packed rolls may open while cooking under pressure. Allergen: contains wheat (gluten in the bulgur).
