What sets these Aegean lamb meatballs apart is what they leave out: no bread, breadcrumbs or egg. They contain only ground lamb, onion juice and spices; the meat’s own fat binds the mixture. That is why the mixture is kneaded for a long time and rested before cooking briefly over high heat on a griddle.

Extract the onion juice

Finely grate the onion, put it in cheesecloth and squeeze the juice into a bowl. Do not add the pulp to the meat; it releases water as it cooks and can make the patties fall apart. Grate the garlic and add it to the onion juice.

Knead the mixture

Put the ground lamb, finely chopped tail fat, onion juice, salt and spices in a large bowl. Press and knead with the heel of your hand for at least 8 minutes. The mixture is ready when it starts to stick to your hand and holds a fingerprint; the meat proteins bind it together without bread.

Shape the meatballs

Wet your hands, take walnut-sized portions of the mixture, roll them between your palms and flatten them to 1.5 cm thick. This makes twelve patties. Press a shallow hollow into the center of each with your thumb so the middle does not puff up as it cooks.

Cook the first side

Heat a griddle or cast-iron pan thoroughly without oil; a drop of water should evaporate immediately. Arrange the patties with space between them and cook without moving them for 6–7 minutes, until a dark brown crust forms underneath.

Flip and finish cooking

Flip the patties once with tongs; do not press them, or their juices will escape. Cook the second side for 6–7 minutes. Cut into a thick patty to check that no pink remains and the juices run clear.

Reminder

Rest the kneaded mixture in the refrigerator for at least 1 hour. If you shape the patties before the fat has cooled and firmed up, they may fall apart on the griddle.

Kıymayı iki kez çektirmeyin, tarifte bir kez yazıyor ve haklı. İki kez çekilince macun gibi oluyor. Harcı yoğurduktan sonra buzdolabında yarım saat dinlendirmek de işe yarıyor, soğuk harç sacda çok daha iyi tutunuyor.

Sac yerine dökme demir tava kullandım, yağ bile sürmedim, yapışmadı. Sacı önceden iyice ısıttım, köfteyi koyduğunuzda cızırtı gelmiyorsa tava soğuk demektir ve köfte suyunu salıp haşlanıyor.
