Okonomiyaki, an Osaka specialty, is a savory cabbage pancake made from batter cooked in a skillet and topped with a sweet-tart sauce and mayonnaise. Its name is often glossed as “as you like it,” and the dish can be adapted with different ingredients.
Whisk the flour, water, and egg together until smooth. Add the cabbage, shrimp, and green onions and stir to combine.
Heat the oil in a skillet and pour in the batter. Cook over medium heat for 6–7 minutes, until the bottom is golden brown.
Use a plate to flip the pancake and cook the other side for 6–7 minutes.
Drizzle the okonomiyaki sauce and mayonnaise over the top in stripes. Serve hot.
Okonomiyaki tastes best fresh. The batter can be stored in the refrigerator for 1 day, but the cooked pancake softens when reheated.
