This daal, made by slowly simmering red lentils with turmeric and cumin, is a staple of large Pakistani breakfast spreads. Long cooking lets the lentils break down on their own into a velvety texture.

Sauté the onion in olive oil. Add the garlic, turmeric, and cumin, and cook for 2 more minutes.
Add the lentils, tomato, salt, and water. When the mixture comes to a boil, reduce the heat and cook for 55 minutes, stirring occasionally, until the lentils break down and become velvety.
Divide the daal among bowls, top with fresh cilantro, and serve hot.
Stir the daal occasionally as it simmers so the lentils do not stick to the bottom of the pot. If it seems too thick, thin it with a few spoonfuls of hot water before serving.
