A South African winter classic, pampoensop is made by pressure-cooking pumpkin with onion and cinnamon until soft, then blending it into a smooth, creamy soup. Rich in vegetables and low in saturated fat, it makes a heart-friendly starter.

How to make it?

Sauté the vegetables

Sauté the onion in olive oil until lightly golden. Add the pumpkin and carrot and cook, stirring, for another 5 minutes.

Pressure-cook

25 min

Add the vegetable stock, cinnamon stick, salt and black pepper and close the lid. Once the cooker whistles, reduce the heat to low and cook for 15 minutes, then wait for the pressure to drop naturally.

Blend until smooth

5 min

Remove the cinnamon stick and blend the soup until smooth. Thin with a little more vegetable stock if needed.

Reminder

Never fill the blender jug to the brim when blending hot soup: steam pressure can force the lid off and cause burns.

Kabağı 3 santimden büyük küpler halinde doğradığım için tarifteki 15 dakika yetmedi, 20 dakikada tam yumuşadı ve blenderdan sonra bile ufak parçalar kaldı. Küçük küp kesmek gerçekten süreyi kısaltıyor.

Tarçın çubuğu yerine toz tarçın kullanabilir miyim, yoksa çorbanın kıvamını ve rengini mi bozar? Elimde çubuk kalmamıştı ama yine de denemek istedim, mutfağım şu an başka baharatla dolu.

Toz tarçın kullanabilirsiniz, editör notunda da belirttiğimiz gibi çorba biraz daha bulanık görünür ama tadı değişmez, yarım çay kaşığı 1 çubuğun yerini rahatlıkla tutar.
