An everyday Cuban loaf, pan Cubano is made from a simple yeast dough brushed with a cornstarch mixture and baked to give it a thin, crisp crust. It freezes well, making it a useful bread to keep on hand.

How to make it?

Activate the yeast

Mix the lukewarm water, sugar and yeast and leave for 10 minutes, until foamy.

Knead the dough

45 min

Knead the flour, salt, cooking oil and yeast mixture into a smooth dough. Cover and leave to rise for 45 minutes.

Shape

8 min

Shape the dough into a long loaf and place on a baking pan.

Bake

25 min

Brush with the cornstarch mixture and bake in an oven preheated to 220°C / 430°F for 25 minutes, until the crust is crisp.

Reminder

Brush on the cornstarch mixture just before putting the loaf in the oven; otherwise, the crust will not develop the desired crispness. Allergens: contains gluten (flour).

Mısır nişastalı karışımı fırına vermeden hemen önce sürmek gerektiği tarifte net değildi, ben hamuru şekillendirir şekillendirmez sürdüm ve kabuk beklediğim kadar çıtır olmadı. Bu sırayı daha açık yazmanızı isterim.

Hamuru 45 dakika yerine 30 dakikada mayalandırdım, ekmek fırında beklediğim kadar kabarmadı ve içi biraz sıkı kaldı. Bir dahaki sefere süreyi kısaltmayacağım; tam 45 dakika beklemenin dış kabuğun çıtırlığını da etkilediğini fark ettim.
