A beloved Portuguese snack, pastéis de bacalhau are made by mixing desalted cod with potatoes and parsley, shaping the mixture with spoons, and frying it. Crisp on the outside and soft inside, they are served as an appetizer or snack.
Mix the flaked cod, mashed potatoes, sautéed onion, egg, parsley, and black pepper.
Use 2 spoons to shape the mixture into oval fritters.
Fry in oil over medium heat for 5–6 minutes, until golden on all sides.
Serve hot.
Refrigerate the uncooked shaped fritters for up to 1 day or freeze for up to 2 months. They are best eaten fresh after cooking. Allergens: Based on the ingredient list, this recipe contains egg and fish. Check product labels for other allergens in packaged ingredients.
