Anticuchos, a well-known Peruvian street snack, are made by marinating beef heart in chile paste and vinegar, threading it onto skewers, and grilling it. Cooking the heart to the right texture takes care, since it toughens if overcooked.

How to make it?

Prepare the heart

Trim the membranes and veins from the beef heart, then cut it into 2–3 cm cubes.

Marinate

Mix the chile paste with the garlic, cumin, vinegar, salt, and black pepper. Coat the beef heart cubes and marinate for 8 minutes.

Thread onto skewers and grill

10 min

Thread the beef heart cubes onto skewers and cook on a hot grill for 2 minutes per side, until lightly charred on the outside and pink in the center.

Reminder

Do not leave the heart on one side of the grill for more than 2 minutes, or it will toughen and become rubbery. Do not reduce the vinegar in the marinade; it is what tenderizes the meat fibers.

Acı kırmızı biber ezmesi bulamadığım için yerine pul biberle karıştırılmış domates salçası kullandım, renk daha koyu oldu ama acılık dengesi hâlâ tutarlıydı. Sirke miktarını aynı bıraktım ve et yine de güzelce yumuşadı.

Güzel bir çözüm, domates salçası pul biberle birleşince ají panca'nın tatlı-acı karakterine oldukça yakın bir sonuç veriyor. Sirke miktarını sabit tutmanız da doğru olmuş, yumuşatma etkisi ondan geliyor.

Her yüzü 2 dakika pişirmek benim ızgaramda yeterli olmadı, içi hâlâ çok çiğ kaldı; 3'er dakikaya çıkarmam gerekti ama bu sefer de kenarları biraz sertleşti. Doğru süreyi tutturmak sandığımdan zor oldu.
