A street food from Madeira, espetada is made by marinating large cubes of beef with garlic and bay leaves, traditionally threading them onto bay branches, then grilling. The simple marinade lets the flavor of the meat shine.

How to make it?

Marinate the meat

30 min

Mix the large cubes of beef tenderloin with garlic, crushed bay leaves, olive oil, coarse salt and black pepper. Cover and leave for 30 minutes.

Thread onto skewers

5 min

Thread the marinated meat cubes tightly onto metal skewers.

Grill the skewers

20 min

Grill the skewers over high heat for 20 minutes, turning occasionally, until browned outside and cooked to your preferred doneness inside. If you do not have a grill, a preheated air fryer gives a similar result in the same time.

Reminder

Leave the meat to marinate for at least 30 minutes so the flavor can soak in; do not rush this step. Allergen note: this recipe contains no known allergens.

Izgaram yoktu, tarifte önerildiği gibi airfryer'da 200 derecede denedim, 15 dakikada dışı güzelce kızardı. Sarımsak ve defne yaprağının kokusu ete gerçekten işlemiş, sade ama doyurucu oldu.
