Fry the potatoes

Fry the potatoes in oil over medium heat for 6 minutes for the first fry, until lightly cooked. Remove them and let them rest for 5 minutes, then fry them again over high heat for another 5 minutes, until crisp. Double-frying makes the outside crisp.

Make the gravy

Melt the butter and add the flour. Cook over low heat for 2 minutes, then slowly add the meat broth, stirring constantly. Cook for 8 minutes, until thickened.

Finish the gravy

Add the soy sauce and black pepper and boil for another 2 minutes.

Put the fries on a serving plate and sprinkle the cheese pieces over them. Pour the hot gravy over the top right away. The gravy should be hot so the cheese softens slightly.
