This walnut and raisin holiday loaf is made with a yeast-free yogurt dough and cooked in a pressure cooker used like a small oven, without the pressure valve. Walnuts and raisins turn simple bread into a festive treat.
Knead the flour, yogurt, baking soda, and salt. Add the walnuts and raisins and mix until a nonsticky dough forms.
Grease the bottom of the pot with olive oil and add the dough. Close the lid without the pressure valve and cook over low heat for 10 minutes. Flip the dough and cook the other side for 10 minutes more.
Remove the bread from the pot and let cool on a wire rack. Slice and serve.
Do not install the pressure valve when closing the lid; the cooker is used only as an oven here. Lightly flour the bottom of the pot before adding the dough to keep it from sticking and burning. Contains wheat (gluten), dairy, and tree nuts (walnuts).
