Brought to Brazil by Lebanese immigrants, quibe is a torpedo-shaped snack with a bulgur shell and a sautéed ground beef filling. The whole-grain bulgur casing and spiced filling make it a party classic.

How to make it?

Soften the bulgur

Soak the fine bulgur in hot water for 10 minutes, then drain and squeeze out as much water as possible.

Make the shell mixture

Knead the softened bulgur with 150 g ground beef, the grated onion, and cumin until smooth.

Prepare the filling

15 min

Sauté the chopped onion in cooking oil until softened. Add the remaining ground beef and cook until it is no longer pink. Stir in the mint, parsley, salt, and black pepper, then remove from the heat.

Shape and fry the croquettes

15 min

Take a portion of the shell mixture and hollow it out in your palm. Fill it with the beef mixture, seal the edges, and shape it into a torpedo. Fry in hot cooking oil until golden.

Reminder

Seal the edges of the bulgur shell tightly around the filling; otherwise, the filling may leak out during frying. Allergen: contains wheat (gluten).
