A symbol of Betawi wedding traditions in Jakarta, roti buaya is made from yeasted whole-wheat dough shaped like a crocodile and baked. This special loaf, a symbol of lifelong fidelity, is placed at the center of the celebration table.

How to make it?

Knead the dough

Knead the whole-wheat flour, yeast, sugar, salt, olive oil, and warm water until a smooth dough forms.

Let the dough rise

Cover the dough and let it rise for 15 minutes, until doubled in size.

Shape the loaf

Punch down the dough and shape it into a long piece. Form the crocodile’s body, tail, and ridged back by hand, then use scissors to snip in scales.

Bake

15 min

Bake in an oven preheated to 190°C / 375°F for 15 minutes, until golden brown.

Do not make the tail too thin when shaping the dough, or it may break easily in the oven. Allergen information: Contains wheat (gluten).
