Sagdana is a chilled sago dessert served at Ramadan tables in the Hejaz. The sago pearls are first cooked in water until translucent, then thickened with sugar in milk and scented with cardamom, saffron, and rose water. You can feel each pearl on the spoon; unlike a smooth milk pudding, this dessert has a distinctly beaded texture. It thickens as it cools and is served sprinkled with pistachios.

How to make it?

Rinse the sago

Drain the soaked sago in a strainer and rinse it under cold running water until the surface starch is gone. Soak the saffron in two 15 ml measures of warm milk.

Cook until translucent in water

Bring 500 ml of water to a boil, add the sago, and cook over medium heat, stirring often, for 10–12 minutes. The pearls should turn translucent, with only a pinhead-size white dot remaining in the center.

Thicken in milk

15 min

Add the milk and sugar and cook over low heat for 12–15 minutes, stirring constantly so it does not catch on the bottom. Remove from the heat when the dessert coats the back of a spoon in a thin layer; it will still be loose at this point.

Add the aromatics

Stir in the cardamom, saffron and its milk, and ghee. Add the rose water after removing the pot from the heat; if it boils, its aroma will dissipate.

Transfer to bowls

Divide the dessert among six bowls and sprinkle with finely chopped pistachios. Once it reaches room temperature, cover the bowls and refrigerate.

Reminder

Soak the sago for 30 minutes in cold water before cooking, and chill the filled bowls in the refrigerator for at least 2 hours. The dessert may look loose on the stove, but it thickens as it cools; if you thicken it too much on the stove, it will become firm once chilled. Allergens: Contains milk and tree nuts. Sagu incilerini kaynar suya azar azar atmak gerekiyor, bir seferde dökünce dibe çöküp birbirine yapıştı ve topak hâlinde pişti. Safranı da gül suyundan önce katın, ikisini birlikte ekleyince renk tam oturmadan koku baskın geliyor.
