Scorpionfish has little flesh and many bones, so it is simmered whole and strained rather than cooked as fillets. The broth made from the bones gives the soup its body and depth, which fillet-based fish soups lack. The dorsal spines are venomous and must be cut off.

Clean the fish

Wear thick gloves and cut off the dorsal and side fins at their bases with scissors. Remove the gills and innards. Rinse the fish thoroughly in cold water; there is no need to scrape off the scales, since it will be strained and they will not get into the soup.

Simmer the fish for broth

Put the fish in 2 liters of cold water with the coarsely chopped onion, carrot, and potato. Bring to a boil, skim off the foam, and simmer over low heat for 25 minutes. Do not let it boil vigorously; turbulence will cloud the broth.

Strain the broth and pick the meat

15 min

Remove the pot from the heat and strain the contents through fine cheesecloth. Transfer the fish to a plate. When it is cool enough to handle, pick the flesh away from the bones. Mash the vegetables with a fork and stir them back into the strained broth.

Finish the soup

Return the strained broth to the pot, add the olive oil and salt, and bring it to a boil. Add the picked fish and heat for 5 minutes.

Temper the egg yolks

Whisk the egg yolks with the lemon juice. Gradually whisk in two ladlefuls of hot soup to warm the mixture. Turn off the heat, pour in the tempered mixture while stirring, and sprinkle with chopped parsley.

Reminder

The spines on the dorsal and side fins of scorpionfish are venomous and can cause painful swelling if they puncture the skin. Wear thick gloves while cleaning the fish and cut off the fins at their bases with scissors. The venom does not remain after cooking; the danger is from being punctured while cleaning.

Terbiyeyi doğrudan tencereye dökünce kesildi, sıcak çorbadan azar azar alıp ılıtmak gerekiyor.

İskorpitin dikenleri temizlerken acıtıyor, makasla keserek çalıştım. Kemik suyunu kaynatırken köpüğünü almak da gerekiyor, alınmayan köpük çorbayı bulanıklaştırıp ağır bir tat bırakıyor.
