Add the grated tomatoes, cumin, and red pepper flakes. Simmer over low heat until the sauce thickens.
Make small wells in the sauce and crack in the eggs one at a time. Cover and cook until the egg whites are set.
Serve hot straight from the pan with bread.
Important: Thicken the tomato sauce before cracking in the eggs, or the eggs may spread out in a watery sauce. Contains egg. Take care not to let the yolks become too firm while cooking covered.
