Shelpek is an everyday bread from the Kazakh steppe, made by rolling yeasted dough flat and frying it in a skillet. It is often cooked in pairs for special occasions and enjoyed spread with butter or kaymak (clotted cream).
Knead the flour, yeast, lukewarm milk, sugar, oil, and salt into a soft dough. Let it rise in a warm place for 1 hour.
Divide the dough into pieces and roll them into flat rounds.
Fry in oil over medium heat for 3–4 minutes, until golden on both sides.
Serve hot.
Store in a covered container at room temperature for up to 2 days.
