The word hamod in the name means “sour,” and lemon is a main ingredient in this soup, not just a garnish: eighty milliliters of lemon juice may seem like a lot for a pot of soup, but it cuts through the lentils’ earthy heaviness. Swiss chard leaves add body, while the stems provide a crisp bite. A garlic and cilantro tempering is added at the very end, after the heat is turned off.

Cook the lentils

Put the rinsed lentils in 2 liters of cold water and bring to a boil. Skim off the foam that collects on the surface. Reduce the heat and cook until the lentils are tender but still hold their shape; they are ready when they mash easily between your fingers. Do not add the salt or lemon yet.

Prepare the chard and potato

Wash the Swiss chard in plenty of water and separate the leaves from the thick white stems. Cut the stems into 1 cm pieces and the leaves into 2 cm strips; the stems take longer to cook, so keep them separate. Finely chop the onion and dice the potato into 2 cm cubes.

Add the potato and chard stems

Add the onion, potato, and chard stems to the lentils, stir in the salt, and cook over low heat. The potato should offer slight resistance when pierced with a fork. If the soup has thickened, thin it with hot water; it should flow off a spoon.

Add the chard leaves

Add the Swiss chard leaves cut into strips and cook for 6 minutes. The leaves will wilt and turn dark green but should still hold their shape. Overcooked chard will cloud the soup and dull its color.

Make the cilantro tempering

Heat the olive oil in a small skillet and stir the finely chopped garlic and ground coriander for 40 seconds; do not let the garlic turn darker than golden. Remove the skillet from the heat and stir in the chopped fresh cilantro; it will sizzle and release its aroma. Pour the mixture over the soup, cover, and let stand for 2 minutes.

Finish with lemon

With the heat off, stir in the lemon juice and grind in the black pepper. Taste the soup; it should be distinctly sour. If needed, add 20 ml more lemon juice. Divide among bowls and serve hot with toasted pita on the side.

Reminder

If you soak the green lentils in warm water for 1 hour, the cooking time is reduced by 10 minutes. Add the lemon juice at the very end; acid added at the beginning can toughen the lentil skins and keep the lentils from softening.
