Siyez bread is a dark, close-crumbed loaf made with flour from siyez, an ancient wheat grown in Kastamonu. Siyez has weaker gluten than modern wheat, and long kneading does not strengthen it; it breaks down instead. The dough is therefore kneaded briefly and strengthened with folds rather than relying on gluten development. Used alone, the flour makes a very dense loaf, so bread flour makes up one-fifth of the flour blend.

Mix the flours and add the water

Combine the siyez flour and bread flour in a large bowl. Add all the water and stir with a spoon just until no dry flour remains. Do not add the yeast or salt yet. Letting the flour absorb the water on its own allows the gluten to develop and reduces the need for kneading.

Knead briefly

When the autolyse is complete, add the yeast, salt, and olive oil. Knead by hand for 6 minutes. Do not try the windowpane test with siyez dough; its weak gluten will not form a membrane, and trying to achieve one can lead to overkneading. Stop when the dough comes together and pulls cleanly away from the bowl.

Fold the dough in two rounds

During the first rise, fold the dough twice, at 30-minute intervals, by pulling the edges toward the center. Each fold adds air and strengthens the gluten without kneading; with siyez, these folds take the place of kneading.

Shape

Turn the dough out onto a floured counter. Fold the edges toward the center to form a round ball, then place it seam-side down in a floured bowl. Cover and let it undergo its final rise. It is ready to bake when a fingertip indentation slowly springs back halfway.

Bake

40 min

Preheat the oven with the Dutch oven inside to 220°C / 430°F. Lower the dough into the pot on parchment paper and make 1 deep slash across the top with a razor blade. Cover and bake for 25 minutes, then uncover and bake for 15 minutes. The bread is done when it sounds hollow when tapped on the bottom.

Reminder

After mixing the flour and water, let the dough rest for a 30-minute autolyse. Let it undergo a 90-minute first rise, then, after shaping, a 45-minute final rise. None of these three resting periods is included in the recipe’s stated times.
