Siyez is an ancient einkorn wheat cultivated for thousands of years in Ihsangazi, Kastamonu. Its kernels are harder than those of modern wheat, so they absorb water slowly and need a long simmer. This soup is finished with a yogurt-and-egg tempering that must not be boiled. The kernels hold their shape and remain distinct in the soup.

How to make it?

Simmer the einkorn

Drain and discard the soaking water. Add the einkorn to 1,800 ml fresh water, bring to a boil, skim off any foam, and simmer over low heat for 45 minutes. A kernel should have no hard center when pressed between your fingers; if it does, add 100 ml hot water and continue cooking.

Prepare the yogurt tempering

Whisk the yogurt, flour, and egg until completely smooth. Gradually whisk in ladlefuls of hot cooking liquid to warm the mixture; after five or six ladlefuls, it should be at about the same temperature as the pot.

Combine

Pour the warmed yogurt mixture into the soup in a thin stream, stirring constantly. Add the salt and heat over low for 6 minutes. Turn off the heat as soon as the first bubbles appear around the edges; boiling will curdle the yogurt.

Drizzle with mint butter

Melt the butter, stir in the mint for 10 seconds, and pour it over the soup before the mint darkens.

Reminder

Soak the einkorn for at least 8 hours, preferably overnight, in cold water; unsoaked einkorn will remain hard in the center even after simmering for an hour, so every grain in the soup tastes raw.
