Solterito is a traditional salad from Arequipa, made with cooked fava beans, corn, tomato, and lemon juice. It is a great way to use leftover cooked beans and corn. Olive oil and a small amount of cheese make it a light yet satisfying starter.

Prepare the fava beans

Peel the outer skin from each cooked fava bean; this noticeably softens the salad’s texture.

Chop the vegetables

Dice the tomato, red onion, and cheese. Place them in a large bowl with the corn and peeled fava beans.

Dress the salad

Whisk the lemon juice, olive oil, salt, and black pepper in a separate bowl. Pour over the salad, toss gently, and serve immediately.

Reminder

Peeling the outer skins from the fava beans one by one takes time but noticeably softens the texture; the salad will be firmer if you skip this step. Allergen: contains milk and dairy products (cheese).

Kırmızı soğanı çok ince doğramadığım için salatada baskın kaldı, bir dahaki sefere kağıt inceliğinde dilimlemem gerekiyor. Peynir ve limon dengesi güzeldi, sadece soğan yüzünden ilk lokmalarda tadı biraz bastırdı.

Önceki akşamdan artan haşlanmış mısır ve baklayla yaptım, 15 dakikada sofraya geldi. Baklanın kabuğunu soymak biraz uğraştırdı ama sonuç gerçekten daha yumuşak bir doku verdi.
