Prepare the turnips

Stuffed vegetables and leaf rolls
A regional stuffed dish made by hollowing turnips, filling them with ground beef and rice, and simmering them in their own liquid. The turnips’ mildly sharp flavor balances the spiced meat filling.
Peel the turnips. Carefully hollow out the center from one end with a corer, taking care not to pierce the sides.
Mix the ground beef, rice, grated onion, tomato paste, Turkish red pepper flakes and salt thoroughly.
Press the filling into the hollowed center of each turnip with your finger.
Arrange the stuffed turnips in a pot. Add the water and, if desired, the grape molasses. Cover and simmer over low heat until the turnips are tender.
Important: Leave enough flesh around the edges when hollowing the turnips. If they are hollowed too thinly, they may fall apart as they cook. Adding a pinch of grape molasses or sugar to the cooking liquid can mellow the turnips’ sharp flavor.
