A classic Spanish home-style dish, albóndigas are air-fried and served with a saffron almond sauce. These hearty meatballs also work well in a lunchbox, and the sauce takes some care to get just right.

Set the air fryer to 180°C / 355°F and cook the meatballs for 12 minutes, turning them occasionally. If you do not have an air fryer, bake them in a preheated 180°C / 355°F oven for 18–20 minutes.
Lightly toast the ground almonds in a dry pan over low heat. Blend them with the meat stock until smooth.
Soak the saffron in warm water for a few minutes, then stir the saffron-infused liquid into the almond sauce. Add the olive oil and salt, then simmer the meatballs in the sauce over low heat for 10 minutes.
Stir the almonds constantly as they toast in the pan; even a few seconds too long can burn them and make the sauce bitter. Contains tree nuts (almonds), eggs, and wheat (gluten).
